Focaccia, even the word makes me feel good…

It sounds like summer in a small Italian village with laundry hanging by the window, the colorful striped sunbeds on the Liguria coast or the stifling heat in a chianti vineyard in Tuscany… You get the picture? 

Why would you buy focaccia when you can make it?

I am sure that you do not want to be deprived of this amazing scent of the baking dough, a mix of warm bread, rosemary, and olives which fills the house with a wonderful fragrance!

Back on topic, let’s make focaccia!

What do we need? All we need is love and:

For the dough

-500 gr of Flour

-5 gr of baker’s fresh yeast

-30 cl of water

-1 teaspoon of salt

-1 tablespoon of olive oil 

For the Topping

-1 teaspoon of “fleur de sel” or coarse salt

-1 tablespoon of olive oil

-1 tablespoon of Provencal herbs (rosemary, thyme…)

-2 or 3 sundried tomatoes (optional, easy recipe here)

– few olives (optional)

Ready for an easy Focaccia recipe ?

In a large bowl, add the flour, salt and olive oil, then make a well in the middle.

In a separate bowl, crumble the baker’s fresh yeast and add the water.

With the help of a spatula, mix it all and start to knead with your floured hands until forming a homogeneous dough.

Cover the bowl with a cotton tea towel and let it rise for one hour.

Preheat the oven to 200°C.

Place the dough on a baking sheet (do not forget the parchment paper, “Nobody puts baby in a corner”) and flatten out the dough with the palm. When the dough is flat enough, make soft pushes into the dough with the help of your fingers.   

Add the Provencal herbs, fleur de sel (or coarse salt), olives, slice of sundried tomatoes, and drizzle with olive oil.

+TIPS: I like to de-stone the olives, but it is a personal preference… 

Bake it for 20 mins

+TIPS: When the focaccia is cooked, I like to cut the focaccia in half horizontally, then add mozzarella and bake it for 2 more minutes to obtain melted mozzarella focaccia. You may eat it with salad or as an Aperitivo…

You know what?! Eat it the way it makes you happy!
